Guest expect the napkins are clean, in good condition and well folded at the restaurant.

STEPS | HOW/ STANDARDS | TRAINING QUESTIONS |
1) One pile of napkins has to be placed on the worktop. | Ensure that the worktop is clean and dry. Emphasize the importance of hygiene |

2) Open up the pile of napkins. | Stained, torn and faded napkins must be separated. What has to be done with napkins that are: 1. Stained – are returned to laundry area for rewashing. 2. Torn - are returned to housekeeping for write off. 3. Faded - Are folded and may be used as underlines. |

3) Ensure that the back side of the napkin is facing up before folding it. | Explain the difference between the two sides |

Now ask the trainee to practice the task from start to end to test competency.
