ORDERING AND RECORDING OF STORE FOOD


Purpose 

To ensure that all food store items are ordered, reordered and stored correctly.


Policy 

That all food store goods are ordered and reordered in a timely fashion and stored according to first in first out standard.


Procedure 

Storage, ordering and reordering of food store goods falls under the responsibility of the Executive Sous Chef or in his absence the Commissary Chef.


He has to ensure that food is ordered, reordered, issued and stored in a correct fashion, with the business forecast in mind.


Food needs to be checked against par stocks daily and re-ordering needs to take place within the pre agreed time frame.


The issuing must always follow the first in - first out principle.


Labeling and general maintenance of the store is the responsibility of the store keepers.
