PRE SERVICE BRIEFING


Purpose 

All rosteredkitchen associates will attend the pre-service briefing 10 minutes before the start of the shift ensuring effective communication on all-important matters.


Policy

To ensure that all staffs will attend pre-service briefing by sous chef.


Procedure

  1. Be on time.

  2. Participate.

  3. Gather information and write down items.

  4. Communicate with other staff.

  5. Check booking numbers in restaurant.

  6. Check occupancy forecast.

  7. Know what the menu items are for the day

  8. Know what the daily special is.

  9. Check any training schedules
